Grapefruit and Fennel Salad

INGREDIENTS

  • 2 red grapefruits, peeled and thinly wedged

  • 2 pink grapefruits, peeled and thinly wedged

  • 2 fennel bulbs, thinly sliced

  • 1/2 red onion, thinly sliced

  • 1/4 cup mint leaves, for topping

  • 1/4 cup fennel leaves, for topping

  • 1 teaspoon lemon zest

  • 1 teaspoon flakey sea salt

Dressing:

  • 1/4 cup olive oil

  • 2 tablespoons maple syrup

  • Juice of 1 lemon


RECIPE

  1. Begin by preparing the grapefruits. Peel them and carefully cut them into thin .wedges. Place them onto a platter.

  2. Thinly slice the fennel and red onion and add on top of the grapefruit wedges.

  3. In a separate small bowl, prepare the dressing by whisking together the olive oil, maple syrup, and freshly squeezed lemon juice.

  4. Pour the dressing over the grapefruit, fennel, and red onion.

  5. Grate some lemon zest on top.

  6. For the topping, scatter the mint leaves and fennel leaves over the salad.

  7. Add flakey sea salt as desired.

  8. Serve the grapefruit and fennel salad immediately as a refreshing and flavorful side dish or starter.
