Crispy Harissa Lime Butterbeans on Whipped Feta

INGREDIENTS

  • 1 can (15 oz) butter beans, drained and rinsed

  • 2 tablespoons harissa paste

  • 1/2 teaspoon ground cumin

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • Juice of 1 lime

  • 8 oz vegan feta cheese

  • 2 garlic cloves, whole

  • 2 teaspoons chili oil

  • 1 teaspoon lime zest

  • 1 teaspoon chives, finely chopped

  • Grilled bread, optional for serving


RECIPE

  1. Preheat the oven to 375°F (190°C). Line a sheet pan with parchment paper.

  2. In a medium-sized mixing bowl, combine the drained and rinsed butter beans with harissa paste and ground cumin. Toss until the beans are evenly coated.

  3. Add 1 tablespoon of olive oil and 2 minced garlic cloves to the mixing bowl with the harissa-coated butter beans. Toss until the garlic is evenly distributed.

  4. Transfer the coated butter beans to the prepared sheet pan, spreading them out in a single layer.

  5. Roast the butter beans in the preheated oven for 15-20 minutes, or until they become nice and crispy, stirring halfway through to ensure even cooking.

  6. While the butter beans are roasting, prepare the whipped feta mixture. In an immersion blender, combine vegan feta cheese, 2 tablespoons of olive oil, and 2 whole garlic cloves. Blend until smooth and creamy.

  7. Spread the whipped feta in a serving bowl, creating a smooth layer.

  8. Lightly drizzle chili oil over the whipped feta.

  9. Once the butter beans are crispy and golden brown, remove them from the oven and allow them to cool slightly.

  10. Spoon the roasted harissa lime butter beans over the whipped feta in the serving bowl.

  11. Top with chopped chives and lime zest for garnish.

  12. Serve as a delightful appetizer or side dish.
