Casarecce Arrabbiata

INGREDIENTS

  • 4 cups dried casarecce (you can use another type of pasta if desired)

  • 3 tablespoons olive oil

  • 4 garlic cloves, minced

  • 2 fresh chilis, chopped (or 4-6 dried)

  • 1 teaspoon chili flakes

  • 1 can whole cherry tomatoes

  • 10 fresh cherry tomatoes, sliced

  • 1 teaspoon salt

  • 1/3 cup chopped basil


RECIPE

  1. Cook casarecce according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain and set aside.

  2. In a large pan, heat olive oil over medium heat. Add minced garlic, fresh chilis (or dried), and chili flakes. Adjust to your heat preference. Sauté for 1-2 minutes until garlic is fragrant, being careful not to brown.

  3. Pour in the can of whole cherry tomatoes. Add the sliced fresh cherry tomatoes. Cook for 5-7 minutes, allowing the tomatoes to soften and release their juices.

  4. Season the sauce with salt to taste.

  5. Toss the cooked casarecce into the pan with the arrabbiata sauce. As needed, add some of the reserved pasta cooking water to achieve the desired consistency.

  6. Finish by stirring in the chopped basil, ensuring it is evenly distributed throughout the dish.

  7. Serve the Casarecce Arrabiata hot, garnished with extra basil if desired. Enjoy this flavorful and spicy pasta dish!
